Even though I'm not the family cook, the kids & I found ourselves reading cookbooks together at the end of summer. The soup recipes especially caught our attention, and so Soup Night was born. Once a week I make up a big pot of soup, along with some fresh biscuits or dumplings or something like that. The bonus is that I get to enjoy the leftovers at lunch for the rest of the week - am I the only one who could eat soup every single day?
This (pictured above) is a very yummy Baked Potato Soup, which was my first try at homemade soup this season. Since then, we've done Clam Chowder, Chicken Noodle, and Squash-Apple. All a success, which surprises me - this bunch has never been all that in favour of soup in the past.
When I was a kid, we had a family friend that would say my mum could make soup out of buttons. I only hope one day to earn that title myself...
That looks really good, I am trying to do soup most days for lunch as it is hearty, filling and most of all warm on these bitterly cold days (freezing and snowing here this week). I will definitely be trying this recipe. Thanks for sharing it with us.

I too could eat soup every day when its home made. Yours looks very delicious, and potato (with leek, cheese, asparagus to name a few) is my absolute favourite. Thanks for sharing.

The soup looks very tasty, great job! My mother-in-law is one of those who can make soup with buttons, she calls it refrigerator soup, never the same always tasty. She is my hero!

I eat soup every day for lunch right now, I'm eating Progresso light cos I'm counting Weight Watcher points and these only have 1 or 2 per cup.
Your soup look yummy. I like the idea of soup night, I was thinking of doing a crock pot recipe each Sunday so there was always something to eat when we felt like it. Soups would be a good thing to do, with fresh bread or biscuits.

Mmmm tell me about Squash-Apple - I have both of those ingredients in spades at the moment.
I love soups.
I just made a great Thai Pumpkin and a veggie Lentil with lemon.
Both were fantastic.
There's something so cozy and Fall about homemade soup.

Love love soup! So excited it can be thrown in the mix now, without having to eat it under the fan with the ac kicking. Baked Potato Soup is one of my very faves!

Soup, the perfect food. Especially hearty, stick to your ribs soup. Ed says he could eat soup every day once the cool autumn days arrive.
I bet in a few years you will rightfully earn that title and many other honorable ones. :-)
